6 oz wholemeal flour
2 oz rolled oats
2 tsp baking powder
1 tsp ground cinnamon
2 oz dark brown sugar
1 tblsp blackstrap molasses
1 tblsp malt extract
4 oz butter or pure
2 organic eggs
3 or so ripe bananas (roughly 12oz weight) – mashed
4 oz pumpkin seeds (reserve a little to decorate)
Pre heat oven to 160 degree fan assisted or gas 4.
Line a 2 lb loaf tin with greaseproof paper or liner. Mix dry ingredients into a bowl. Add butter and eggs and whisk all this together till evenly mixed. Add the mashed banana and seeds and place mix into pre prepared cake tin.
Cook for approx 1 hr 15 mins or until skewer comes out clean. Try after 1 hour. If top is over browning cover with some foil or greaseproof paper. Take out of oven and when slightly cooler turn out onto a wire rack leaving it to cool properly. Serve plain or with butter.
