As it is full of dried fruit you can go fairly light on added sugar or you could omit sugar altogether adding honey or agave nectar.
• 1 pint liquid (water, milk, soya milk, coconut milk, whatever)
• 8 oz. All-Bran (or shop’s own equivalent)
• 1 lb (or slightly more) mixed dried fruit
• 4 oz. brown sugar (or dark muscovado)
• 4 oz. plain flour
• 4 oz wholemeal flour
• 2 tsp baking powder
Preheat oven at Gas Mark 4 (350’F, 180’C). Place all ingredients (minus flour and BP) in a bowl and leave to soak for an hour. Mix in the flour + BP and pour into an 8″ (or so) cake tin – greased and/or papered and bake for about an hour.
